This is the kind of chicken soup that is meant to boost your immune system big time. It's the kind that will have a bit of a kick to it due to the ample amounts of garlic and ginger. But if you're feeling sickness coming on, make a big batch of this and it may just help kiss your cold goodbye!
2 T grassfed butter or ghee (or olive oil)
7 C Homemade Chicken Bone Broth (See My Recipe under "Body")
1/2 large onion, diced
3 stalks of celery, thinly sliced
2 large carrots, thinly sliced
5 shiitake mushrooms (or any variety-- shiitake is good for immunity though), sliced
2 inch nub of ginger, peeled (you can peel ginger with a spoon!) and minced
1 inch nub of fresh turmeric, peeled and minced (or 1 t dried, ground)
6-8 cloves of garlic, peeled and minced
1/2 bunch of parsley leaves, roughly minced
2 roasted chicken breasts, shredded
pinch of pink or sea salt (then additional to taste after cooking)
pinch of freshly cracked pepper (then additional to taste, after cooking)
Directions: Preheat the crockpot on high, before you begin to chop everything up. Throw everything into the crock pot. Once all ingredients are in, turn heat down to low setting. Let cook for 6 hours. Then serve in bowls, adding more salt and pepper if desired.
Makes about 6-8 servings.
Tip: love to store some of this soup in mason jars after eating, and use the soup as a remedy for each meal over a couple of days, if I feel under the weather. The vitamins, protein and collagen from the bone broth will repair body tissues and fight off illness, while the phytonutrients in the garlic, ginger, onions and mushrooms will really help expel your cold. The turmeric helps to reduce inflammation, while the greens give an extra kick of chlorophyll to purify your blood.
